Craziest Cookie Ever

I love to cook, and I love to bake but always with a healthy twist. I especially enjoy cooking with my kids! The bigger the mess they make, the louder they laugh!
With summer winding down, I miss my camp days. I have fond memories of roasting marshmallows by a campfire and eating smores. Since my kids are too little to sit quietly (ANYWHERE) around a campfire, we enjoy smores in our kitchen. We tried microwaving smores, but this activity was only entertaining for twenty seconds as we watched the marshmallow explode.
For a longer afternoon activity, I experimented by combining my 4 ingredient healthy, gluten free peanut butter cookie with my favorite campfire summer treat!
To fully capture the decadence of this peanut butter smores cookie, I collaborated with a new mom friend who I met through a Chicago Moms In Business Group. Turns out, we live three blocks from each other and both have two little kids to chase after.
Shayna, who owns Shayna Hardy Photography, promptly arrived with her two boys for a baking play date and business meeting! While the kids played with trains, we discussed balancing work (my writing and her photography) and mommyhood.
This recipe could be one of the easiest yummiest cookies ever and anything with smores is super fun and delicious for everyone!
4 Ingredient Peanut Butter Cookie with Smores Recipe:
- 2 cups creamy natural peanut butter or 1 15oz jar
- ¾ cup white sugar
- 1 egg
- 1 tsp baking soda
- 3 sheets graham crackers- break into rectangles
- 1 chocolate bar- break into rectangles
- 5 big marshmallows- pull apart into halves
- baking spray
- Preheat oven to 400 degrees.
- Combine first 4 ingredients into a mixing bowl until smooth.
- On a greased baking sheet, take a spoonful of batter and roll into a ball and then flatten onto baking sheet.
- On the bottom layer of PB batter, add a rectangle of graham cracker, top with a rectangle of chocolate, and lastly top with the marshmallow.
- Take another spoonful of batter, roll into a ball, flatten, and press firmly over Smores and connect top layer of batter to bottom layer of batter.
- Place cookies at least 1 inch apart. My batter produced 9 big cookies.
- Bake cookies for 12 minutes or until the edges appear golden brown.
- Allow cookies to cool before digging in (I know this is hard!) but when they first come out of the oven, they are crumbly and the marshmallow needs time to deflate.
- These PB cookies are amazingly delicious alone too!
